Chop onions and scallions. Mince garlic.
Thinly slice carrots, cabbage, green beans, celery and shiitake mushrooms.
Soak noodles in water for about 10 minutes. Loosen them up in the water.
Chop the tofu into cubes and put it in an air fryer for 7- 8 minutes at 400°F until sides get slightly golden. You can also saute tofu over the stove. Add a tablespoon of oil in a saute pan and cook each side over medium heat for about 3-4 minutes until sides golden in color. Set this aside.
Add olive oil to a large saute pan. Add in the onions, scallions and garlic. Cook until garlic has golden in color.
Add in the carrots, celery, cabbage, green beans, and shiitake mushrooms . Cook for about 5 - 8 minutes or until vegetables have soften,
Add the vegetable broth, tamari sauce, sesame oil, and white pepper and bring to a simmer
Drain the soaked noodles and add them to the pan and mix well. Make sure to cover all parts of the noodles with sauce. Mix really well. Continue to simmer and mix noodles until noodle have cooked through and sauce has evaporated, about 5 - 10 minutes. If you run out of liquid and the noodles are not cooked just add in more vegetable broth.
Once noodles have cooked add in the green parts of the scallions and some fresh black pepper.
Serve immediately and enjoy!
