Ingredients
  

  • 1 cup arugula
  • 1 cup cabbage (red or green)
  • 2 radishes thinly sliced
  • 1/2 an avocado cut into cubes
  • 1/8 cup onions cut thinly
  • 3 mushrooms cut into slices
  • 3 artichoke pods
  • 1/4 cup pressure cooked lentils
  • 1/4 cup pressure cooked quinoa
  • 1/2 tsp turmeric
  • 1/8 tsp dried oregano
  • 1/8 tsp dried parsley
  • 1 salt and pepper to taste
  • 1/4 juice of a lime

Instructions
 

  • Mix the arugula and cabbage in a large bowl
  • Add cut onions, mushrooms, radishes, avocado, mushrooms and artichoke
  • Add lentils, quinoa, and edamame
  • Sprinkle spices on top and lime juice. Mix and enjoy!
