Hi, I’m Jen, the creator of Refreshing Bites, and have an absolute passion for food. I’m a wife and mother to two awesome daughters. Professionally I’m a graphic and web designer. I find cooking and baking as another outlet for my creativity, I just love creating things. From craft projects to design, photography, videography, sewing, animation, painting, and sculpture. I’m a jack-of-all-trades when it comes to artistic endeavors. I’m autodidactic by nature and completely self-taught in my cooking and have always been a visual learner. I love watching cooking shows from food competitions to Chef Show and the Great British Bake Off.  I think the best job in the world are those travel food shows and all they have to do is discover new foods in a foreign country. Yep Feed Phil has the best job. I also love health documentaries, if there’s some health food protocol or diet, I’ve probably tried it. I’m a big believer that food affects the state of our health.

I created this website after people kept asking me for recipes for my dishes. I eat a restrictive diet (mostly plant-based and gluten-free, minimally processed, no refined sugar!). My personal health has guided me in this direction. So I wanted to show that I’m not just eating salads all day (well okay mostly a lot of fresh vegetables and fruit through out the day 😉 But there can be a wide variety of healthier versions of dishes you can eat. It just takes a little more time and effort. This site is also a great combination of all my passions of food, wellness, beauty, photography, and videography.  I also wanted to share my refreshed healthy versions of my favorite recipes. Here you’ll find tasty vegan, gluten-free, and naturally sweetened recipes that use simple wholesome ingredients.
