Method
- Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone baking mat
- Mash banana till creamy and add date syrup
- Add dry ingredients: gluten free oats, flaxseed, chia seeds, and pumpkin spice
- Fold in nuts and chopped dates
- Scoop a spoonful of cookie batter on lined baking sheet. You will need to press into batter to form cookie shape. Makes about 9 medium size cookies.
- Bake for 10 - 15 minutes until lightly golden on the sides.
- Cool for 10 minutes and enjoy! You may just want to double this recipe cause they will all be gone in one day.
