Amazing Banana Oatmeal Cookies

This versatile recipe is my go-to cookie recipe. It just starts with bananas, date syrup, and gluten-free oats. I add ground flax, chia seeds, and walnuts for some added protein and omega-3s. These three ingredients are great anti-inflammatories. They are naturally sweetened by bananas, date syrup, and dried dates. You can also use any nuts like walnuts, pecans, or almonds. I add some pumpkin spice to give it that boost of flavor. It really enhances the banana, dates, and nuts. You can easily play around with this recipe and add any extras that you like. They are gluten-free, oil-free, and vegan!


Let’s Bake!

What you’ll need

  • 1 banana
  • 1 cup gluten free oats
  • 1 tbsp date syrup or maple syrup
  • 1 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 1 tsp pumpkin spice (can also use cinnamon)
  • 1/4 cup walnuts (can also use almonds or pecans)
  • 1/2 cup chopped dates

Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone baking mat. Mash banana with fork in a medium size bowl. Add the date syrup and mix.

Add in the oatmeal, nuts, ground flax seeds, chia seeds, and pumpkin spice. Mix all the ingredients. Fold in the chopped dates and nuts.

Scoop a spoonful of cookie batter on lined baking sheet. You will need to press into batter to form cookie shape. Makes about 9 medium size cookies.

Bake for 10 – 15 minutes until lightly golden on the sides. Cool for about 10 minutes. Serve and enjoy!

  • 1 banana

  • Add dry ingredients: gluten free oats, flaxseed, chia seeds, and pumpkin spice
  • Fold in nuts and chopped dates
  • Scoop a spoonful of cookie batter on lined baking sheet. You will need to press into batter to form cookie shape. Makes about 9 medium size cookies.
  • Bake for 10 – 15 minutes until lightly golden on the sides.
  • Cool for 10 minutes and enjoy! You may just want to double this recipe cause they will all be gone in one day.
