I add green lentils to a lot of my meals. They are a wonderful vegan protein that has nine grams of protein per 1/2 cup. It’s also high in fiber, aids in digestion, and stabilizes blood sugar levels. It also is high in nutrients and vitamins like iron, magnesium, and b vitamins. Pressure cooking them is so simple and quick. Plus pressure cooking removes the lectins, which can cause digestive problems. They go great with my Super Boost Salad and I like to add them to my Vegan Tikka Masala recipe for some added protein.

What you’ll need:
- 1 Cup of dried green lentils
- Water
- Instant Pot
Pour one cup of lentils into a mesh strainer and rinse it under water till water turns clear. Shake access water
Pour rinsed lentils into the Instant Pot
Add 1 1/2 cups of water.
Close and seal Instant Pot. Click on Bean setting and cook for nine minutes.
Once the timer goes off release the pressure and wait till the safety indicator drops.
Open the Instant Pot and fluff the lentils.
Serve hot with salad or store in an air tight container in the fridge.
