I use my Instant Pot for a lot of my recipes cause it makes things quicker and convenient. Cooking chickpeas is so simple, there’s no need for overnight soaking. The benefits of pressure cooking chickpeas is that it removes lectins, which can cause digestive issues like leaky gut syndrome. I use chickpeas in several of my recipes cause it’s a great vegan protein and full of vitamins and fiber. I like to add them to my salads like my Super Health Boost Salad. Also, use them in my super Easy Homemade Hummus recipe.

1 cup of dried chickpeas
Rinse chickpeas under running water until water turns clear.
Place rinsed chickpeas in intant pot.
Enter timer for 40 minutes on Bean/Chili settings.
Release pressure when timer goes off. Open lid once silver safety indicator drops.

Instant Pot Chickpeas
Ingredients
- 1 cup (130g) dried chickpeas
- 4 cups (946.35g) filtered water
Instructions
- Place dried chickpeas in a mesh colander and rinse underwater till water runs clear.
- Place rinsed chickpeas in instant pot and pour 4 cups of water.
- Secure lid and make sure pressure release is on sealed.
- Enter 40 minutes on Bean/Chili setting.
- Once timer goes off pull of the pressure release and open once silver safety pressure indicator drops. Serve with salad and enjoy!
