Nut and Fruit Protein Bites (Lara Bar DIY)

I love eating Lara Bars and I wanted to try and make my own since I was avoiding packaged food. These are easy to customize to your own favorite dried fruit and nuts. I put in some walnuts, pecans, hazelnuts, chia seeds, and ground flax. Then I add in some dates, fig, and goji berries. I love adding a few strips of dried mango as well if I have it on hand. It’s high in protein and vitamins. You can also simplify this recipe by adding just one type of nut and dates.

How to Make Protein Bites

What you’ll need:

  • walnuts
  • pecans
  • hazelnuts
  • dates
  • chia seeds
  • ground flax seeds
  • dried fig
  • goji berries or mangoes. Can use dried fruit of choice (cherries, cranberries
  • food processor

Add 1 1/2 cups of nut mix to food processor.

Add chia seeds, flax seeds, dried fig, and goji berries to food processor.

Blend all the ingredients till it gets a crumbly texture, about 1 – 2 minutes. Don’t over blend or you’ll release too much of the oils from the nuts.

Transfer mixture to mold trays.

Divide mixture evenly into mold trays.

Press down on the mixture into the mold till top is smoothed.

Carefully remove from molds. Serve and enjoy!

Refreshing Bites
Protein snack bites made from nuts and dried fruit.

Ingredients
  

  • 1 1/2 cups nut assortment of walnuts, pecans, and hazelnuts ( can use any nut to your liking )
  • 5 – 6 pieces of dates
  • 1 tbsp ground flax
  • 1 tbsp chia seeds
  • 1 dried fig (optional)
  • 1/8 cup goji berries (optional)
  • 2 – 3 pieces of dried mango (optional)

Instructions
 

  • Place all the ingredients in a food processor and blend for about 1 – 2 minutes. Do not over-blend as it will release too much of the oils from the nuts.
  • Pour into molds and press down to form shapes. You can also roll them into balls, make sure to press the mixture as it can be crumbly.
  • Store into an air-tight container and good for 5 days at room temperature.
